De Mello Coffee: From a Chance Encounter to a Craft Revolution

Updated over 2 months ago

What happens when curiosity meets craftsmanship? For Felix Cha, it was a journey into the world of coffee that started by chance in Melbourne, Australia. At the time, Felix wasn’t even a coffee drinker, but he was captivated by how much the flavour could shift from one day to the next. "On Monday, it can taste like chocolate. On Tuesday, it can taste like raspberry," he recalls, a reminder of how every detail—from the weather to the mood of the customer—can influence the perfect cup.

That curiosity turned into passion, and in 2013, Felix and his brother Won opened De Mello Coffee in Toronto, naming it after a Brazilian coffee myth. What began as a small café serving hand-crafted coffee quickly grew into a roastery, fuelled by their shared dream of offering something more—something special—for coffee lovers who, like them,
believed coffee is more than just a drink. It’s an experience.

At De Mello, it’s about more than just a great cup of coffee. It’s about making a difference. They pay triple the standard price for premium beans, sourced directly from small, sustainable farms in Colombia, Guatemala, Costa Rica, and Brazil. A dollar from every pound of coffee sold goes straight to supporting these farms, ensuring the kind of partnerships that elevate the entire coffee community while maintaining the high quality De Mello customers expect.

Now, with two bustling cafés in Toronto and a growing wholesale network across Canada, Felix’s vision is clear: De Mello isn’t just a place to grab a cup; it’s a space for connection. It’s a community of coffee lovers who share in the love of the craft, built on trust, transparency, and respect for the artistry of each bean.

At De Mello, coffee isn’t just about the flavour—it’s about the story behind it, the relationships built along the way, and the moments shared over every cup. And we at Tre'dish couldn’t be more excited to share that story with you.
